A book came out recently called “How Not To Die,” by Dr. Michael Greger. Nice title. It is by a doctor who has been lecturing for years about improving peoples diet. He is pro plant based diet. That is all good but he puts people that promote saturated fat intake as “flat earth society” members and the only difference is that the people that believed in a flat earth didn’t hurt anybody, but the people that say fat is good for you are going to give people heart attacks. In a small skillet heat the remaining ½ teaspoon olive oil on medium low. Whisk the egg whites and eggs together with a tablespoon of water until light and airy and add to the small skillet. Let cook slowly undisturbed until ½ of the eggs have set. Use a spatula to gently lift one side of the omelet so that the runny eggs can pool below, then lay back down the cooked eggs and top the entire top of the omelet with cheese.
